Walking Safari Carrot Cake

Have I told you about the time…

… we tracked white rhino on foot? Seeing a mother and her calf with nothing but trees and bushes between them and us was one of our most thrilling experiences in South Africa. The most important lesson learned that day was what to do if you are being chased by a rhino: climb a tree. I anxiously enquired of our guide, Sam “what if I can’t climb a tree?” and his reply was “if you are being chased by a rhino, you can”. All a matter of motivation.

After a day of hiking through the bush (and after removing all the pepper ticks), afternoon tea at camp is always delicious. The day we were treated to Jomo’s carrot cake, however, remains a culinary highlight. The secret ingredient to the cake is crushed canned pineapple but fresh air, invigorating hikes through the African bush and the rush of relief at not having to climb a tree to escape a raging rhino, make it even better. Enjoy with a cup of rooibos tea.
